By Florence Jenkins Muse How many times this summer have you said, “I just don’t have anything to make a sandwich?” Did you have two slices of bread, mayonnaise, and a cucumber? My lady friends love my cucumber sandwiches. Just peel a cucumber, slice it thin on a slice of bread, sprinkle it with ginger, spread mayonnaise on the other slice of bread and you’ll have a delicious sandwich. Did you ever make banana sandwiches? When I was a little girl my aunt made them for my lunch at school and they were so good. How sorry I am to be allergic to bananas today. Another tasty sandwich is salmon salad. You will want to keep pink or red salmon in your pantry for sandwiches. After you remove the salmon from the can make sure you scrape off all the black skin so your salad will not have a bitter taste. Mash up the salmon with a fork, add pepper, diced pickles, and mayonnaise and you’ll have a tasty sandwich when you spread it on your bread. This sandwich is good throughout the year especially in winter with a hot cup of chocolate. As an extra note; if you grill your cheese sandwich in a frying pan on top of the stove, have you thought of adding sliced tomatoes to the sandwich? Delicious. |
