Dutch Baby Breakfast

Turn on oven to 425 degrees.
Put 1/2 stick of margarine or butter in a 9-inch glass pie pan, or other
low round pan the same size. Put pan in the oven while it is heating up
to melt the margarine. Do Not use soft margarine, it has too much water
and the batter won't rise correctly.
Make a batter of 5 eggs,
1 cup white flour, 1 cup milk, 1/4 teaspoon salt and beat well until all
lumps disappear. You can make the batter the night before and keep it in
the frig all night. May take a few more minutes to bake if the batter is
cold. When the oven is hot and the margarine is melted, remove the
pan and pour in the batter. Some of the margarine will spread over the
top, and that's OK. Bake 22 minutes. Batter will puff up 3 or 4 inches
on the sides and brown slightly. Serves 4
Topping:
Any kind of fruit will work—frozen
strawberries and plums or blueberries. Cook the fruit while the batter
is baking, break up large pieces, and add enough sugar to sweeten slightly.
Leftover topping will keep in frig for several weeks.
Cut into wedges and pass
the warm topping. You can make this for fewer people by halving the recipe
for 2, or even a single person. Use one more egg than there are people
to eat it. Use a smaller pan for smaller amount. For one person: 2 eggs,
1/4 cup flour, 1/4 cup milk, pinch of salt. Melt a generous tablespoon
of margarine in the dish. The oven still has to be 425, but it probably
won't take more than 20 minutes to cook. |
