Chop up a few zucchini, a few squash, cut up a couple of carrots, a small onion and any other veggie that you like. Add water and bring to a boil. When tender, drain and add a can of Swanson veggie broth and a tablespoon of olive oil. I warm this up and have comfort food for a cold winter’s evening.
