Waldorf Salad

This wonderful apple salad is a must for your Christmas celebration. While it’s called “salad”, a second helping makes a fine desert!

5 lb. hard red apples (such as Fugi or Braeburn), cored and diced
5 stalks celery, finely diced
2 oz. pecan pieces (opt)
1 20 oz. can pineapple tidbits, drained
1 cup lite cherry pie filling
6 oz. lemon Nonfat, Sugar Free Yogurt
1 cup Fat Free Sour Cream
1 cup Fat Free Mayonnaise
1 tsp. Granulated Nutrasweet Sweetener
1 tsp. Vanilla
1 tsp. Apple Pie Spice
Directions
Combine apples, celery, pineapple, pie filling and pecan pieces in a large bowl. In a separate bowl, mix the remaining ingredients and stir together. Pour over fruit mixture.  Mix well. Chill for at least 2 hours. 
Makes 1 gallon. 
About 120 calories a cup.
